Sweet potato, 1/2 to 1 head per person
Cut sweet potato into wedges and place them in a large zip-lock bag. Add a couple of teaspoons of cornstarch as well as salt, cumin and paprika to taste. Add a couple of drizzles of olive oil and shake the bag so all the wedges are well-coated before spreading them out evenly on a baking sheet. Bake the sweet potato fries for 30 minutes in a preheated oven at 170 C , flipping them over half-way so they bake evenly.
This recipe can be easily customized to suit individual tastes – the spices mentioned can be switched up or replaced according to taste and herbs can be added. The cornstarch helps in making the fries crunchy, feel free to omit it if that’s not how you like your fries!
