I have to be honest, I’ve never been a fan of french toast, or anything soggy for that matter. I like all my food like my cereal – crispy and crunchy when possible. But the husband loves it and I thought I should try a healthy version for my first attempt at making french toast at home.
A quick google search and I landed on The Healthy Maven‘s Davida and her Best Healthy French Toast. This ‘not soggy’ and ‘not eggy’ french toast recipe has quickly become a staple in our house for the weekends! It is very easy to make and has me looking forward to having it.

Here are a few modifications I make:
- I use any nut milk I have on hand to make it. I have tried it with almond, oat, macadamia + sunflower seed milk and they all work the same.
- I leave out the almond extract, it’s difficult enough to find real vanilla extract here (I order mine from here) so I have not troubled myself with trying to find it.. Will definitely add it if I do stumble across some. I’m sure it would take the recipe to another level!
- I use avocado oil instead of coconut oil – the husband does not like to taste coconut in his food. I love using avocado oil because it has a neutral flavor and a high smoking point.
