
After my success with Davida’s Best Healthy French Toast, I knew I wanted to try more of The Healthy Maven’s recipes – cue in her Chocolate Chip Baked Oatmeal Cups. I make a batch of nut milk every week, and when I need to use up my last bit of them I reach out for this recipe.

These muffins are a one bowl wonder; they are quick to make, as easy as mixing all the ingredients, filling up a muffin tray and popping them into the oven.

The outcome is a very kid-friendly alternative to porridge in the morning, and we also love having them as a snack with coffee.
